Prof. Toshiaki Mitsui

Toshiaki MITSUI is a Professor in plant biochemistry at the Graduate School of Science and Technology, Niigata University. He is a specialist of the molecular regulatory mechanism of starch metabolism in rice. He is particularly interested in the molecular cell biological aspects of α-amylase function. His recent research project is to develop and breed high temperature tolerant rice including "sake rice" from the viewpoint of controlling starch metabolism.
