Dr. Mami Sato
Sakeology Center, Niigata University, Japan
Mami SATO is a specially appointed Assistant Professor at the Sakeology Center, Niigata University. She has worked on revealing the physiological role of cellular antioxidative defense systems using biochemical and molecular biological techniques. In particular, oxidative stress regulation-related cancer pathology and ferroptosis, a novel form of cell death, are her research topics. She is currently applying her research experiences to uncover the bioactivities of components derived from sake and its byproduct: sake lees.
