Prof. Philippe Darriet

Philippe DARRIET is Professor of oenology at the Institute of Vine and Wine Sciences of the University of Bordeaux. His research activities focus on the characterisation of volatile odorous compounds, often present in trace amounts, which are involved in the typical aromatic nuances of certain varieties such as Sauvignon Blanc, Riesling, Cabernet Sauvignon, Merlot, Viognier, noble rot sweet wines and brandies (Cognac). He also studies the chemical and microbiological aspects involving these volatile compounds as well as their genesis during the winemaking and ageing process. He is involved in interdisciplinary projects concerning the study of viticultural parameters on the aromatic component of wines (vine ecophysiology, vine health) as well as concerning the sensory perception of wines by expert, professional and consumer panels.
