Patrick LUCAS is a Professor in wine microbiology at the Institute of Vine and Wine Sciences of the University of Bordeaux. He is a specialist of the lactic acid bacteria involved in the malolactic fermentation of wine. He is particularly interested in the biodiversity of the species Oenococcus oeni. His research aims at understanding the genetic bases of the diversity of the strains of O. oeni, their adaptation to wine, and their impact on the quality of wines during the malolactic fermentation.
