Dai HIRATA, Ph.D. is a Professor in the Faculty of Agriculture and Vice Director of the SCNU (Sakeology Center, Niigata University). He is a specialist of yeast genetics, molecular cell biology, and zymurgy. He has conducted studies on sake brewing using yeast as a tool for alcoholic fermentation and healthy aging using yeast as a model organism. His recent research is the breeding of sake yeast suitable for high-quality sake brewing and the identification of a factor(s) related to healthy aging in yeast.
