Yoshito KAKIHARA is an Assistant Professor in the health unit at the Sakeology Center of Niigata University. He is a specialist in biochemistry and molecular biology. He is interested in finding and understanding the bioactivity of the food extracts as well as their functional components. Currently, he is studying the effect of sake lees on bone metabolism.
