Takuji MIYAMOTO is a specially appointed Assistant Professor at the Sakeology Center of Niigata University. He has worked on identification and characterization of genes associated with nutritional element uptake and cell wall biosynthesis of rice. He is curious about how soil nutritional status of paddy fields changes rice endosperm characteristics and affects the quality of sake. His recent works aim to understand impacts on sake quality by applying fertilizers to rice paddy fields.
